Lemon & Lavender Butter Cookies

These delightful little treats embody the essence of Spring, offering a delectable dance of buttery shortbread infused with fragrant lavender and zesty lemon. They are irresistibly addictive, making them perfect for sharing with friends or gifting to loved ones. With a recipe that's as simple to create as it is to savor, these cookies promise a burst of joy in every bite, ensuring they are devoured instantly.


Ingredients


1 cup/120g All-Purpose Flour

1/4 Tsp. Salt

1/3 Cup/66g Granulated Sugar

1 1/2 Tsp. Culinary Lavender

1 tsp. finely grated Lemon Zest

1/2 cup/113g Unsalted Butter, softened

1/2 tsp. Vanilla extract

Sugar to sprinkle on top


Method


  1. In a mortar and petal or small grinder, add lemon zest, lavender, and about 1 tablespoon of your pre-measured sugar. Grind briefly until combined.


  2. Beat softened butter in a bowl for about one minute, to get it going. Then add your lavender sugar mix, the remainder of your sugar and the vanilla extract. With an electric mixer beat for two minutes.


  3. Sieve your flower and salt into the butter mixture. On low-speed mix until combined, about a minute.

  4. On a flowered surface, shape your dough into a disk. Wrap in cling wrap and place in the refrigerator for 30 minutes.


  5. Roll out your dough until it’s approximately 1/8 inch thick, or 3 mm. Use a 1 & 1/2inch cookie cutter to cut out your cookies. Reform leftover dough and roll out more cookies until all the dough used. Sprinkled the top of your cookies with sugar and place in the freezer for 15 minutes.


Preheat oven to 325°F/160°C. Place cookies on parchment lined baking sheet, bake on the second shelf from the bottom for approximately 12 to 14 minutes or until very, very light browning on the edges.
