Divine Raspberry Cream Pie [No-Bake]

This no-bake dessert is silky smooth in texture, with a light and creamy filling that contrasts beautifully with the firm crumbly crust. A delicious mixture of cream cheese, heavy cream, raspberry jello and a touch of sugar, whipped together until light and creamy. The fresh raspberries and whipped cream add a refreshing finish with a burst of fruity flavor and vibrant color, making it a perfect treat for any occasion. Enjoy!
Ingredients
170g/6oz Digestive biscuits /or Graham crackers
85g/3oz Butter – melted
1 Pkt Raspberry Jelly
285ml/9.5fl oz Boiling water
226g/8oz Cream Cheese – room temp
170g/6oz Castor Sugar
3Tbs Fresh Lemon Juice
3-5 drops Vanilla Extract
285ml/9.5fl oz Heavy Cream
1. Melt jelly in boiling water, allow to cool, set aside
2. Crush the biscuits and add melted butter. Press into a 9 or 10inch removable bottom tin, set aside
3. Put cheese in a large bowl, start mixer to soften the cheese. Add sugar, juice and extract and mix to combine. Add the jelly and mix until the mixture is cold and thick. Add the cream and beat until the mixture doubles in size. Pour over the biscuit base and allow it to set in the fridge.
Top with whipped cream and/or fresh raspberries.
