Say hello to your next dessert obsession! In this cozy step-by-step video, I’ll show you how to make a golden-topped, juicy-centered blueberry cobbler that’s bursting with flavor and personality. With fresh blueberries, a hint of lemon, and a buttery biscuit topping, this cobbler is perfect for family dinners, brunches, or midnight snacking (no judgment).
Ingredients
For the berry goodness:
* 700g (4½ cups) fresh blueberries
* 70g (⅓ cup) sugar
* 1 tablespoon lemon zest
* 1 tablespoon lemon juice
* 1 tablespoon all-purpose flour
For the golden topping:
* 230g (1½ cups) all-purpose flour
* ½ teaspoon kosher salt
* 19g (1½ tablespoons) sugar
* 9g (2¼ teaspoons) baking powder
* 85g (6 tablespoons) cold, unsalted butter (cut into cute little ½-inch cubes)
* 180g (¾ cup) heavy cream (plus extra for serving, if you’re feeling fancy)
Method
1. Berry Prep Magic Preheat your oven to 375°F (190°C). Grab a bowl and toss the blueberries with lemon juice and zest—think of it as a citrusy spa day for the berries. Then sprinkle on the sugar and flour, giving it all a good stir. Set it aside for now and let the flavors mingle.
2. Topping Time In a separate bowl, whisk together the flour, salt, sugar, and baking powder. Next, add in the butter chunks, working them into the mix until it looks like coarse breadcrumbs. (Pro tip: Cold butter is the secret to cobbler topping perfection.) Pour in the cream and gently stir until just combined. No need to overmix—we’re not making bread here!
3. Assemble the Dream Team Pour those luscious blueberries into a 1.4-liter (6-cup) baking dish. Take spoonfuls of dough and form them into little patties about 2–2½ inches wide and 1-inch thick. Arrange these doughy delights over the berries—don’t worry if they overlap a bit, it’s all part of the charm. Sprinkly about 1/4 tsp sugar over the top of the biscuits - that's optional but I like the crustiness of it ;)
4. Bake and Bask Pop it in the oven and bake for 35–40 minutes, or until the topping is golden and the blueberry juices are bubbling away like molten fruit lava. Let it cool for a few minutes (if you can resist). Serve warm, and if you’re feeling indulgent, drizzle with extra cream or a scoop of ice cream.
