Baked Lemon Pie

Indulge in a zesty lemon-kissed dessert that’s like a mullet haircut: business on top, party on the bottom. It's like a lemon decided to throw a party in your mouth and invited all its citrusy friends. Simple ingredients + Simple construction = Sheer puckery bliss that’ll make your taste buds tango! 🍋🍰

1TBS/15g Unsalted Butter
3TBS/30g All-purpose Flour
1C/237ml Whole Milk
1/2C + 1Tbs/114g Sugar
3 large eggs, separated
2 Tbs Lemon Zest
1/2C/118ml Lemon Juice
In a large bowl, blend the sugar and lemon zest together with the back of a wooden spoon.
Add the butter and blend into the sugar mixture. Add egg yolks and with handheld mixer, beat for one minute. Add flour and beat in for another minute. Clean sides of bowl. Add lemon juice and blend in briefly. Wash your beaters, you'll need them soon for the egg whites. With whisk, add milk and blend in.
In a medium mixing bowl, beat your egg whites on medium high speed until they reach stiff peaks.
Gently fold into egg/sugar mixture - should take about 2 to 3 minutes.
Pour mixture into your baking dish and bake at the center of your oven for 30-40minutes until center is firm and lightly golden brown.
Alternatively, you can put it in a water bath. Place your dish in an larger ovenproof dish, fill outside dish with very hot water to about midway up. See video of details.
Remove from oven and allow to cool for about 15 minutes. Serve asis or with whipped cream and fresh berries. Refrigerate leftovers; also excellent cold. Enjoy this simple pudding any time of year!
