Apple Flip - Apple cake slices - So easy!

Apple Flip is a quick and delicious recipe my mother could make in five minutes, yet it tastes like a more complex dish. This 90-year-old recipe was passed down from her mother-in-law and is simple enough for beginners to impress. You can substitute pears for apples, but avoid overripe pears to prevent excess moisture. If you don't have self-rising flour, make your own by mixing:
1 cup plain or all-purpose flour, 1 teaspoon baking powder, a pinch of salt.
Voilà -you're a magician! You've made self-rising flour.
Ingredients
1 & ¼ Cups Self-Rising Flour
1 Cup Sugar
2 Eggs
¼ Tsp Cinnamon
¼ Tsp Nutmeg
~4 Tbs Milk
2 Tbs Butter, melted
2 Apples, peeled, cored and cubed small 1/4inch/6mm in size
[keep chopped apples in cold water with a little lemon juice to prevent browning]
Preheat Oven 350F – 180C – Gas Mark 4 | Oven - Center Shelf
Ovenproof backing dish, about pie size, buttered & floured.
Method
From the pre-measured sugar, remove 1/2 Tsp of sugar and mix with a 1/4 Tsp of nutmeg. Set this aside to top the cake before it goes in the oven.
Put eggs into a measuring jug. If they don't measure a half a cup, add milk to the jug to bring it to the half cup mark. Mix lightly together.
In a bowl add sugar, eggs, and melted butter. Using a handheld electric mixer, beat for two minutes until the mixture is pale in color.
Add your flour all at once along with your nutmeg and cinnamon. Fold the flower into the egg mixture. Next, add chopped apples and stir to combine. The mixture will be thick, add a tablespoon of milk at a time and mix well. Add just enough milk so it looks like a very thick batter.
Place into your prepared tin, level the top. Sprinkle the apple flip with the sugar and nutmeg mixture you prepared earlier
Pop your Apple flip in the center of a preheated oven. Check for doneness after 30 minutes by inserting a knife into the center of the apple flip and ensuring it comes out clean. If not, return to the oven for an extra five minutes.
Serve warm as is, or with cream, ice cream, fruit, etc. This simple apple dish is comforting and sure to please any pallet
